DAILY CUPCAKE RECIPE

     Today's DAILY CUPCAKE RECIPE is for all those health conscious foodies out there. Who says you can't have your cake and eat it too? With this cupcake recipe you can! 
     This recipe was given to me by a friend who's very much into eating healthy, and wants me to join in on it. I'm taking the transition very slowly. This recipe is from Hungry Girl. These Chocolate Marshmallow Madness Cupcakes are soooooo fluffy and delicious, it really is hard to believe that they're only 113 calories and only 3 weight watcher's points!!!!! That's insanity!! there will be absolutely no guilt while your enjoying these chocolately delicious cupcakes!! 
     So here's everything you'll need to make these
AMAZING CUPCAKES:


Ingredients:
Cupcakes: 

  1. One 25-calorie packet of hot cocoa mix (like Swiss Miss Diet or Nestle Fat Free)
  2. About 1 3/4 cups of moist-style devil's food cake mix
  3. 1/2 cup of liquid egg substitute (like Egg Beaters Original)
  4. 1 tablespoon Splenda No Calorie Sweetener (granulated) or granulated sugar
  5. 1/8 teaspoon of salt


Glaze:


  1. 1/4 cup Jett-Puffed marshmallow creme
  2. 1 teaspoon light vanilla soy milk

Toppings:
  1. 1 tablespoon mini semi-sweet chocolate chips
  2. 12 mini marshmallows

Directions: 
  1. Preheat oven to 350 degrees
  2. In a tall glass, combine cocoa mix with 2 oz. hot water. Stir until cocoa dissolves. Add 6 oz. cold water and stir well. Set aside.
  3. In a large mixing bowl, combine cake mix, egg substitute, sweetener, and salt. Add the hot cocoa mixture and whisk until smooth.
  4. Line a 12-cup muffin pan with foil baking cups and/or spray with nonstick spray. Evenly distribute cake mixture among the cups.
  5. Bake in the oven for about 15 minutes, until a toothpick inserted into the center of a cupcake comes out clean. Remove from oven and let cool. 
  6. To make the glaze, put marshmallow creme in a small dish. Add soy milk and mix well. 
  7. Once cupcakes have cooled completely, drizzle marshmallow glaze over them. Top each cupcake with 1/4 tsp. chocolate chips and 1 mini marshmallow.
  8. Refrigerate until ready to serve. Enjoy!

    MAKES 12 SERVINGS
